Creamy Peppercorn Sauce Recipe without Brandy 2021

Peppercorn sauce is a culinary cream sauce prepared with peppercorn, which is prepared as a reduction of the cream in the cooking process. Various types of peppercorn can be used in its preparation, such as black, green, and pink, among others.

Primary ingredients are typically peppercorns and heavy cream. Additional ingredients may include butter, wine, brandy, such as cognac, shallots, garlic and additional seasonings, such as bay leaf, star anise, tarragon and salt.

Bring vinegar, salt, and sugar to a boil in a small saucepan over medium heat, stirring until salt and sugar are dissolved (about 2 to 3 minutes). Remove from heat, and let stand 5 minutes. Pour hot mixture over  peppers in jar. Cover and chill 3 weeks.

For the peppercorn sauce, I add a little butter and olive oil and heat until the butter has melted and then I whisk in the chicken stock, Dijon mustard, heavy cream and then the whole peppercorns.

Occasionally, if I really want to amp up the pepper flavor, I’ll also stir in a bit of freshly cracked black pepper. Talk about delicious!

  • 4 beef tenderloin filets or your favorite cut
  • salt and freshly ground black pepper
  • 1 teaspoon butter
  • 1 teaspoon olive oil

  • 1/2 cup chicken stock
  • 15-20 whole black peppercorns
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons heavy cream

Instructions

Cook skillet steak according to reach temperature preferred. Remove steaks from skillet to a plate and set aside to rest as you prepare the peppercorn sauce.

Add butter and olive oil to a skillet over medium heat. Allow the butter to melt and then whisk in chicken stock, Dijon mustard, heavy cream, and peppercorns.

Cook until thick enough to coat the back of a wooden spoon, about 8-10 minutes. Remove from heat and drizzle over steaks for serving.
